During the intensive, one-day course of the program, you will learn:
- FDA Food Code updates,
- How food becomes unsafe,
- The differences between foodborne infection vs. foodborne intoxication,
- Identifying and preventing foodborne illnesses and microbial contamination,
- How foodhandlers contaminate food,
- Preventing cross-contamination,
- Identifying Food Allergens,
- How to avoid the time-temperature abuse of food,
- The principles of purchasing, receiving, storage, and the “flow” of food,
- Food Safety Systems, including Active Managerial Control, HACCP, and Crisis Management,
- Cleaning and sanitizing,
- How to correctly prepare and serve food,
- Sanitary facilities and pest management,
- Employee training,
- Food safety regulation and standards, including the government regulatory system for food and the food service inspection process,
